Firecracker Chickenby ted
Makes 6 servings
Ingredients
- 1 and 1/2 pounds of chicken
- 3 eggs
- 1 cup of vegetable oil
- 3/4 cups of cornstarch
- 3/4 cups of buffalo sauce
- 1 packed cup of light brown sugar
- 2 teaspoons of apple cider vinegar
- 1 tablespoon of melted butter
- 1 teaspoon of soy sauce
- 1 teaspoon of garlic powder
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of mustard powder
- 1/4 teaspoon of salt
Steps
- Preheat oven to 350F
- Whisk together buffalo sauce, brown sugar, apple cider vinegar, butter, soy sauce, garlic powder, chili powder, mustard powder, and salt
- Cut chicken into small pieces and pat dry
- Whisk eggs vigorously in a medium bowl until uniform
- Heat vegetable oil over medium-high heat
- Fry each piece of chicken by dipping in egg, cornstarch, and egg before laying it in the oil
- Cook each side for 3 to 4 minutes
- Remove the chicken with a slotted spoon and place on wire cooling rack
- Adjust heat and add oil as needed until all chicken is fried
- Combine fried chicken with sauce in a large mixing bowl
- Transfer to a 9 x 13 inch baking pan and bake for 10 minutes
- Coat chicken with sauce again, and bake for 10 more minutes
- Serve over white rice
